Additionally, spaghetti and other cooked pasta can become quite mushy and lose its al dente bite after freezing. It’s truly one of those quick, easy recipes that shines when made fresh. What kind of Parmesan cheese should I use?

For the absolute best flavor and texture, we highly recommend using freshly grated Parmigiano Reggiano or a high-quality Parmesan cheese block that you grate yourself. Avoid pre-grated cheeses that often contain anti-caking agents (like cellulose), as these can prevent the cheese from melting smoothly and can result in a slightly gritty or less creamy sauce. Freshly grated cheese melts much more smoothly and contributes a superior, nutty, salty, and complex flavor to the dish that makes a noticeable difference.

How can I make this dish lighter?

If you’re looking to lighten up this creamy chicken pasta without sacrificing too much flavor, you have a few practical options. You could reduce the amount of double cream and substitute part of it with a lighter dairy option, such as whole milk, semi-skimmed milk, or even a lighter single cream. Keep in mind that this will result in a slightly less rich sauce. Creamy Chicken Pasta Recipe

A simple and utterly delicious Creamy Chicken Pasta, featuring tender pan-seared chicken, rich garlic-infused cream, and a bright, zesty touch of lemon and fresh parsley. It’s the ultimate weeknight pasta dish for comfort and coziness, delivering gourmet flavors in under 30 minutes.

Ingredients

  • 2 boneless chicken breasts or thighs, either skin-on or skinless (see notes for tips on thighs)
  • 1 tsp Italian herb seasoning
  • ½ tsp fine sea salt
  • 3 tbsp olive oil, divided
  • 220 g dried pasta (bucatini, spaghetti, linguine, or fettuccine all work well)
  • 1 large garlic clove, finely sliced or minced
  • 1 tbsp unsalted butter
  • 170 ml double cream (heavy cream)
  • 50 g Parmesan cheese, freshly grated (plus extra for garnish)
  • 2 tbsp finely chopped fresh parsley (plus extra for garnish)
  • Freshly ground black pepper, to taste
  • ½ lemon, for both zest (about 1 tsp) and juice (about 1 tbsp)

Instructions

  1. Prepare Chicken: In a bowl, mix chicken breasts (or thighs) with Italian herb seasoning, ½ tsp salt, and 2 tbsp olive oil until well coated.
  2. Cook Chicken: Heat the remaining 1 tbsp olive oil in a non-stick frying pan over medium-high heat. Add chicken and cook for about 7 minutes per side, until golden and cooked through. Remove and let rest on a chopping board; slice into thick pieces before serving.
  3. Cook Pasta: Bring a large pot of well-salted water to a rolling boil. Add pasta and cook for 1 minute less than packet instructions (al dente).
  4. Begin Sauce: Return the frying pan (with any flavorful juices) to medium heat. Add butter and sliced garlic, stirring for about 1 minute until fragrant. Pour in the double cream.
  5. Add Cheese & Pasta Water: Stir in most of the grated Parmesan (reserve some for garnish). Scoop out about 60ml (¼ cup) of starchy pasta cooking water and add it to the sauce. Let it bubble gently for 1-2 minutes, stirring.
  6. Combine: Before draining pasta, reserve about 120-150ml (½ cup) extra pasta water. Drain pasta well and immediately add it to the pan with the sauce. Toss everything together until the pasta is fully coated and melded with the sauce.
  7. Season & Finish: If the sauce is too thick, add a splash of reserved pasta water (1 tbsp at a time) and toss until silky. Taste and adjust seasoning with salt and black pepper. Stir through most of the parsley and add about 1 tbsp fresh lemon juice.
  8. Serve: Spoon pasta into serving bowls. Arrange sliced chicken on top. Garnish with remaining Parmesan, parsley, and freshly grated lemon zest. Serve immediately.

Notes

  • Storage: Store any leftovers in an airtight container in the fridge for 3-4 days. While best eaten fresh, they are still delicious.
  • Reheating: Reheat in the microwave for approximately 2 minutes, or until piping hot. To prevent the pasta from drying out, add a splash of water or milk to the container or bowl before heating.
  • Freezing: Freezing is not recommended for this dish. Cream-based sauces can separate and become grainy upon thawing, and cooked pasta can become mushy. For a freezable pasta dish, consider a baked option like my Chorizo Mac & Cheese.
  • Fresh Pasta: If you choose to use fresh pasta, remember to adjust quantities (approximately 320g fresh pasta for 2 people) and significantly reduce the cooking time (fresh pasta typically cooks in 2-4 minutes).
  • Chicken Thighs Tip: For crispy skin on boneless, skin-on chicken thighs, season them as described. Cook skin-side down in a hot pan, placing a heavy object (like another smaller pan with a tin of beans) on top for about 8 minutes. Flip and cook for another minute or so until cooked through.
  • Pasta Water Usage: Be sparing with the pasta cooking water at first. It’s always easier to add more than to take away. Keep adding a little at a time and tossing it all together until you’re happy with the glossy, silky consistency of your sauce.
  • Cream Choice: While double cream (heavy cream) is recommended for its ultimate richness and stability, you could also use single cream (light cream). Note that single cream will result in a slightly lighter sauce.
