Grilled Peach and Burrata Ciabatta

Grilled peach and burrata ciabatta is the most delicious summer recipe. Ripe sweet peaches, salty prosciutto, fresh basil, and cool, creamy burrata come together on crispy ciabatta for an unforgettable experience. So good.

Ingredients

  • 1 small loaf of ciabatta
  • 2 ripe peaches
  • 2 tbsp olive oil
  • 1 ball of burrata
  • 1 handful of rocket (arugula)
  • 4 slices of Parma ham
  • 1 tsp runny honey
  • Fresh basil sprigs to garnish

Instructions

  1. First, cut the peaches into slices. Heat a pan (or griddle pan) over medium-high heat. Add 1 tbsp olive oil. Lay down the peach slices and fry until golden on both sides, with nice caramelized marks. Remove from the pan when golden.
  2. Slice the ciabatta in half horizontally and drizzle the cut sides with the remaining olive oil. Fry the bread cut-side down in the same pan until crispy and golden.
  3. Top the toasted ciabatta with the burrata, gently spreading it. Add a handful of rocket, seasoning it lightly with a little salt and pepper. Then, arrange the warm peaches and ribbons of Parma ham on top.
  4. Finish by scattering a few basil sprigs and drizzling generously with honey. Slice into portions and serve immediately to enjoy the best flavors and textures.
