Ingredients

For the Prawn Filling:

  • 360 g raw prawns, shelled and deveined (fresh or defrosted)
  • 1 garlic clove, crushed
  • 1 tsp caster sugar
  • 1 tsp cornflour (cornstarch)
  • 1 tsp sesame oil
  • 1 large egg white
  • Salt and freshly ground black pepper, to taste

For the Toasts:

  • 8 slices medium white bread, crusts removed
  • 1 large egg, plus 1 egg yolk (whisked for egg wash)
  • 100-150 g sesame seeds (a mix of black and white is appealing)
  • Vegetable oil, for deep frying (e.g., rapeseed/canola or sunflower)

For the Green Sauce (Optional):

  • ½ large ripe avocado
  • 2 heaped tbsp full-fat Greek yogurt
  • Juice of ½ lime, or to taste
  • 1 small handful of fresh coriander (cilantro)
  • 1 small handful of fresh basil
  • ¼ red chilli, deseeded and roughly chopped (or to taste)
  • 1 garlic clove, roughly chopped
  • 2 tsp fish sauce
  • About 2 tbsp water (to adjust consistency)
  • Salt and freshly ground black pepper, to taste

To Serve:

  • Shallot rings
  • Freshly chopped coriander, parsley, and/or chives
  • Sweet chilli sauce or sriracha yogurt/mayonnaise (optional, for dipping)
  • Lime wedges (optional)

Instructions

  1. Prepare the Prawn Filling: If using frozen prawns, ensure they are fully defrosted and patted very dry with kitchen paper. Finely chop the prawns by hand or blitz them in a food processor until they form an almost paste-like consistency with a little texture remaining.
  2. Transfer the prawn paste to a large mixing bowl. Add the crushed garlic, caster sugar, cornflour, sesame oil, and egg white. Season generously with salt and freshly ground black pepper. Mix everything together thoroughly until well combined and cohesive.
  3. Assemble the Prawn Toasts: Remove the crusts from all 8 slices of white bread. Lay one piece of crustless bread on a clean board. Spread approximately one-quarter of the prawn mixture evenly over this slice. Top with another piece of bread and gently but firmly press down to create a sandwich. Repeat with the remaining bread and prawn mixture to make 4 sandwiches in total.
  4. In a shallow bowl wide enough for dipping, whisk together the large egg and egg yolk to create an egg wash. In a separate shallow bowl, spread out the sesame seeds.
  5. Take one prawn toast sandwich at a time. Dunk it into the whisked egg mixture, turning to coat both sides completely. Then, immediately transfer it to the sesame seed bowl and coat both sides evenly, pressing gently to ensure a good, firm adhesion of the seeds. Aim to use one hand for the “wet” (egg) and one for the “dry” (sesame seeds) to keep things tidy. Repeat for all sandwiches.
  6. Fry the Sesame Prawn Toast: Line a large baking sheet with kitchen paper and set it aside for draining. Pour enough vegetable oil into a large, deep frying pan to reach a depth of 2-3 cm. Heat the oil over medium-high heat until it is shimmering hot but not smoking (ideally 180°C / 350°F). Test the oil temperature with a small piece of bread crust – it should sizzle and float immediately.
  7. Prepare the Green Sauce (if using): While the oil heats, combine all the green sauce ingredients (avocado, Greek yogurt, lime juice, coriander, basil, red chilli, garlic, fish sauce, water, salt, and pepper) in a blender or mini food processor. Blend until completely smooth. Taste and adjust seasonings as needed, adding more chilli for spice, lime for tartness, or water to reach your desired consistency. Pour into a small serving bowl.
  8. Once the oil is at the correct temperature, carefully add about two of the prepared sesame prawn toast sandwiches to the pan. Avoid overcrowding, as this will drop the oil temperature and result in greasy toasts. Fry for 1-2 minutes per side. Using a spatula, gently flip the toasts and cook for another 1-2 minutes, or until both sides are golden brown and crispy, and the prawn filling is thoroughly cooked through. Remove from the pan and place onto the prepared baking sheet to drain any excess oil. Repeat this process with the remaining sandwiches.
  9. Serve: Once all toasts are fried, slice each sandwich diagonally in half to create 8 triangles (or cut into 16 smaller canapés if preferred). Arrange them on a serving plate. Drizzle with the optional green sauce and garnish with fresh shallot rings and chopped coriander, parsley, or chives. Serve immediately with sweet chilli sauce or a spicy sriracha yogurt/mayonnaise on the side for dipping, if desired.

Recipe Notes

Storing Leftovers: Cool any leftover sesame prawn toasts quickly and store them in an airtight container in the refrigerator for up to 1 day.

Reheating: To reheat, place on a baking sheet lined with non-stick baking paper and bake at 200°C (180°C Fan / 400°F) for 8-10 minutes, or until crispy and piping hot throughout. Alternatively, reheat in an air fryer at 180°C (350°F) for 5-8 minutes.

Freezing: Cooked sesame prawn toasts can be frozen for up to 3 months. Cool completely, then store in freezer-safe containers or bags. Thaw fully in the fridge before reheating as instructed above.
