To store leftover pesto: Store in the fridge in an airtight container or jar for up to two weeks. For longer storage, level out the pesto in the jar and add a thin layer of olive oil on top to seal it from air. The olive oil may solidify in the fridge but will melt when used.

To make ahead: You can prepare the components in advance. Roast the tomatoes up to 3 days ahead and store in the fridge, bringing them to room temperature before serving. The pesto can be made 1-2 weeks in advance. Assemble the sandwich only when you are ready to serve to ensure the bread remains perfectly crisp.

How to store fresh basil: To keep basil fresh, trim the stems and place them in a glass with about 1cm of water. Cover loosely with a plastic bag and leave at room temperature for up to a week, changing the water daily.
