  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 garlic clove, crushed
  • 2 tbsp honey
  • 1/2 lime, juiced

For The Salad (but use whatever you like or have on hand):

  • 90 g red cabbage, chopped
  • 90 g white cabbage, chopped
  • 1 cucumber, chopped
  • 1 red pepper, chopped
  • 2 carrots, grated
  • 140 g cooked chicken, chopped (you can use leftover roast chicken or even buy a rotisserie chicken)
  • 3 spring onions, finely chopped
  • Small bunch of coriander, chopped

Instructions

  1. In a medium bowl, whisk together all the ingredients for the dressing (peanut butter, soy sauce, rice vinegar, sesame oil, crushed garlic, honey, and lime juice) until smooth and thoroughly combined. Set aside.
  2. In a large mixing bowl, combine all the salad ingredients: chopped red cabbage, white cabbage, cucumber, red pepper, grated carrots, cooked chicken, finely chopped spring onions, and chopped coriander.
  3. Pour the prepared peanut dressing over the salad mixture. Using tongs or salad servers, toss everything gently until all the vegetables and chicken are evenly coated in the delicious dressing.
  4. Serve immediately, garnished with extra chopped peanuts or sesame seeds if desired. Enjoy your fresh and flavorful Thai Peanut Chicken Salad!

Notes

To store: For best results, store the dressed salad in an airtight container in the fridge for 1-2 days. For longer storage or meal prep, it is highly recommended to keep the dressing and salad components separate until just before serving.

Make ahead: All vegetables can be chopped and prepared in advance, and the dressing can be made and stored separately. Store the chopped salad components in airtight containers in the fridge for up to 3-4 days. The dressing alone will keep well in an airtight jar in the fridge for up to a week. Assemble and dress just before serving to maintain maximum freshness and crispness of the vegetables.

Cook your own chicken: If cooking chicken specifically for this recipe and you don’t have leftovers, place a chicken breast on a piece of aluminum foil, season well with salt and pepper, and scrunch into a sealed parcel. Bake in a preheated oven at 180°C (350°F) for approximately 25 minutes, or until cooked through. This method helps keep the chicken incredibly juicy. Once cooked and slightly cooled, shred it easily using two forks.

Swap the chicken: This recipe is wonderfully adaptable! You could also add cooked prawns for a seafood option, or crispy pan-fried or baked tofu for a delicious plant-based alternative. It’s also one of my personal favorite ways to use up leftover turkey after holiday meals like Christmas or Thanksgiving.
