This Creamy Mushroom & Spinach Pasta is my ultimate weeknight go-to. Imagine perfectly cooked penne, with pan-fried garlic mushrooms, all swimming in a rich and creamy spinach, Parmesan, and crème fraîche sauce. Simply delicious and incredibly satisfying!

Ingredients

  • 2 tbsp olive oil
  • 2 banana shallots, finely sliced
  • 1 large garlic clove, finely sliced
  • 250 g chestnut mushrooms, finely sliced
  • 200 g penne pasta
  • 100 g baby spinach, washed
  • 100 g crème fraîche
  • 40 g Parmesan, grated (check package if vegetarian, if needed)
  • ¼ tsp freshly grated nutmeg
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat the olive oil in a medium-sized non-stick frying pan over medium heat. Once hot, add the finely sliced shallots and cook for about 5 minutes, stirring frequently, until they begin to soften and become translucent.
  2. Add the finely sliced garlic to the pan and cook for just about 1 minute, stirring continuously to prevent it from burning. Immediately add the sliced mushrooms and continue to cook for another 10-12 minutes, stirring often, until they are golden brown and tender.
  3. While the mushrooms are cooking, bring a generously salted saucepan of water to a rolling boil. Add the penne pasta and cook according to package instructions, but for 1 minute less than directed (to ensure it’s perfectly al dente). Before draining, remember to reserve about ½ to 1 cup of the starchy pasta water. Drain the pasta thoroughly.
  4. Return to the mushroom mixture. Add the baby spinach leaves to the pan and cook for 2 minutes, stirring until they are fully wilted. Increase the heat slightly and stir in the crème fraîche. Next, add 2 tablespoons of the reserved pasta water and half of the grated Parmesan cheese. Mix everything well until you have a smooth and creamy sauce.
  5. Add the drained al dente pasta to the pan with the sauce. Toss everything together, ensuring the pasta is thoroughly coated in the rich, silky sauce. If the sauce appears too thick, add more reserved pasta water (a tablespoon at a time) or a little extra crème fraîche until it reaches your desired consistency.
