  • 400 g chopped tomatoes (1 can)
  • 500 ml hot vegetable stock
  • 1 x 700g jar chickpeas, drained weight 540g
  • 180 g ditalini pasta

To serve:

  • Parmesan, freshly grated (use vegetarian-friendly alternative if needed)

  1. Heat 1 tbsp of the olive oil in a large non-stick frying pan over medium-high heat. Add half of the sage leaves and fry for about a minute on each side, or until they become beautifully crispy.
