Ingredients

  • 300 ml strong coffee, cooled to room temperature
  • 225 ml Baileys Irish Cream (150ml for soaking, 75ml for cream)
  • 400 g savoiardi ladyfingers (or boudoir biscuits)
  • 4 large eggs, separated (yolks and whites)
  • 95 g caster sugar
  • 250 g double cream (heavy cream)
  • 250 g mascarpone cheese, at room temperature
  • 2 heaped tbsp unsweetened cocoa powder, for dusting
  • 1 (9 x 13-inch) deep-sided pan (or equivalent dish)

Instructions

  1. In a small, shallow bowl, combine 300ml cooled strong coffee and 150ml Baileys. Stir gently and set aside for dipping.
  2. Carefully separate the eggs into two clean medium-sized bowls (yolks in one, whites in the other).
  3. In the bowl with egg yolks, add the caster sugar. Using an electric whisk, beat for about 5 minutes until the mixture is thick and pale yellow. Gently fold in the remaining 75ml Baileys.
  4. In a separate bowl, whisk together the double cream and room-temperature mascarpone until the mixture is thick and well combined.
  5. Carefully pour the Baileys-egg yolk mixture into the whipped mascarpone-cream mixture and mix well with a spatula until fully combined and smooth.
  6. Using an electric whisk (ensure whisks and bowl are perfectly clean), beat the egg whites to stiff peaks.
  7. Gently fold the stiffly beaten egg whites into the mascarpone mixture, taking care to preserve as much air as possible for a light and airy texture.
