I recommend a blend of 150g grated cheddar, 150g grated Gouda, and 150g grated mozzarella for maximum flavor and stretch. Red Leicester and Parmesan are also excellent choices. Make this one-pan and save on washing up: This recipe can easily be made in a single oven-safe frying pan. First, fry the chorizo until crispy, then remove and set aside. Make the white sauce in the same pan. Once you’ve completed the rest of the recipe steps (mixing in the boiled pasta, cheese, and chorizo), simply top the entire pan with the remaining cheese and breadcrumbs and transfer it directly to the oven.
