Ingredients
- 1 cup plain Greek yogurt (full-fat, at room temperature)
- 1 garlic clove, crushed (or 1 teaspoon garlic granules for a milder taste)
- 1 tbsp fresh dill, finely chopped, plus additional sprigs for garnish
- 4 fresh, free-range eggs
- 50 g unsalted butter
- ½ tbsp smoked paprika (high quality recommended for best flavor)
- ½ tsp red chili flakes (or Aleppo pepper, adjust quantity to your preferred spice level)
- 1 tbsp extra-virgin olive oil (for drizzling, choose a good quality one)
- Salt and freshly ground black pepper, to taste
- Toasted sourdough bread, or other crusty bread, to serve

In a small mixing bowl, combine the room-temperature Greek yogurt, crushed garlic, a good pinch of salt, and the finely chopped dill. Stir everything together thoroughly until well combined and beautifully seasoned. Divide this creamy mixture evenly between two shallow serving bowls, spreading it gently to create a smooth bed.

Fill a medium saucepan with water and bring it to a gentle simmer (small, wispy bubbles, not a rolling boil). Add a splash of white wine or cider vinegar and a pinch of salt to the water. Carefully crack each egg into a separate ramekin or small bowl.

Gently lower the eggs one by one into the simmering water (you can create a gentle vortex with a spoon first for neat shapes). Poach for approximately 3.5 to 4 minutes for soft, runny yolks and set whites. Once cooked, carefully remove the eggs with a slotted spoon, allowing any excess water to drain.
