Ingredients

  2. In a separate, medium-sized bowl, whisk together the warm milk, two large eggs, the two tablespoons of melted butter, and one teaspoon of vanilla extract until they are fully integrated. If you opt to use yellow food colouring for a more vibrant hue, add it to this wet mixture now and whisk until evenly distributed.
  3. Create a small well in the center of your dry ingredients. Gradually pour the wet ingredient mixture into this well. Using a whisk, gently incorporate the wet into the dry, starting from the center and working outwards, until you achieve a smooth, lump-free batter. Be careful not to overmix, as this can develop gluten and make the pancakes chewy.
  4. For an extra-silky smooth batter, pass it through the same sieve you used for the dry ingredients into a clean bowl. This ensures that any remaining tiny lumps are removed, which is vital for thin, flawless crêpes. Do not skip this step if you desire the best texture and appearance.
  5. Place a medium-sized non-stick frying pan over a gentle medium heat. Add a small knob of butter (about half a teaspoon) and allow it to melt and lightly coat the pan’s surface. Ensure the heat is not too high to prevent the pancakes from browning too quickly.
  6. Pour approximately 50ml of batter into the middle of the heated pan. It should sizzle gently at first, which is perfectly normal. These crêpes are only cooked on one side.
  7. Carefully loosen the edges of the cooked pancake with a thin spatula or palette knife. Gently lift and flip it out onto a clean plate or cutting board to cool. Repeat this process with the remaining batter, adding a small knob of butter to the pan before each new pancake, until all the batter is used. Allow the pancakes to cool completely before filling.

The cream should hold its shape but still be soft and smooth. Next, prepare your mangoes by cutting them into large, neat chunks that will fit perfectly down the middle of your cooled pancakes.
  9. Once the pancakes are cool to the touch, lay one flat on your work surface. Place a piece of prepared mango near the bottom-center of the pancake, then dollop a generous amount of whipped Chantilly cream on top of the mango. Gently fold the left and right edges of the pancake inward towards the mango and cream. Then, take the bottom edge and fold it up towards the middle, followed by the top edge folding down, creating a neat, rectangular parcel. Be very careful to avoid tearing the delicate pancake. Once folded, gently flip the parcel over so the seams are on the underside. Repeat for all remaining pancakes.
  10. At this point, you can either enjoy your freshly assembled mango pancakes immediately, or for a firmer, easier-to-slice treat, place them in the refrigerator for at least 30 minutes to chill. Before serving, dust them lightly with icing sugar and garnish with fresh sprigs of mint for an elegant finish.
