Ingredients
For the Chicken and Vodka Pasta:
- Drizzle of olive oil
- 6 chicken sausages
- 1 tbsp unsalted butter
- 1 medium red onion, finely chopped
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, crushed
- 80 ml vodka
- 2 tbsp tomato purée
- 1 tbsp chilli paste or ½ red chilli, finely chopped (deseeded, if desired)
- 1 tsp balsamic vinegar
- 1 x 400g tin chopped tomatoes
- 500 g dried rigatoni
- 250 ml double cream
- 15 g Parmesan, grated
For the Pistachio Pesto: (Optional, but highly recommended)
- 100 g shelled pistachios, toasted
- 100 g fresh basil
- 200 ml olive oil
- 1 garlic clove
- 70 g Parmesan, grated
- 1 lemon, zest and juice
- Salt and freshly ground black pepper, to taste
To Serve:
- Pistachio pesto, homemade (see recipe) or any fresh pesto
- Burrata, torn into pieces
- Freshly grated Parmesan
- Fresh basil, leaves for garnish
Instructions

1. Prepare the Crispy Chicken Sausage: Heat a drizzle of olive oil in a large, deep non-stick frying pan over medium-high heat. Carefully remove the chicken sausages from their skins (starting with cold sausages makes this easier). Add the sausage meat to the pan and use the back of a wooden spoon to break it up into small, mince-like pieces. Cook for 5-10 minutes, stirring occasionally, until the sausage meat is beautifully crispy and golden brown. Transfer the cooked sausage to a bowl and set aside, leaving any rendered fat in the pan.

2. Sauté Aromatics and Deglaze with Vodka: Reduce the heat to low in the same pan. Add the unsalted butter and swirl until melted. Stir in the finely chopped red onion and season with salt and freshly ground black pepper. Sauté for 5-7 minutes, stirring occasionally, until the onions are soft and translucent. Add the crushed garlic and cook for an additional minute, stirring constantly to prevent burning. Pour in the vodka and mix well, allowing it to simmer and reduce until almost all the alcohol has bubbled off.

3. Build the Tomato Base: Once the vodka has nearly evaporated, stir in the tomato purée and chilli paste. Cook for another minute, stirring to coat the onions and deepen the tomato flavor. Pour in the chopped tomatoes and balsamic vinegar. Rinse out the tomato can with about 100 ml of water and add this to the pan. Bring the sauce to a gentle simmer, then reduce the heat and cook for 5-10 minutes, or until the sauce has slightly thickened and reduced.

4. Cook the Pasta: While the sauce is simmering, cook the rigatoni pasta in a large pot of boiling, heavily salted water according to package instructions until al dente (firm to the bite). Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta well.

5. Prepare the Pistachio Pesto (if using): In a blender or food processor, combine the toasted pistachios, fresh basil, olive oil, garlic clove, and grated Parmesan. Blitz until smooth. Season to taste with lemon zest and juice, salt, and freshly ground black pepper, adjusting gradually. Spoon into a bowl, cover, and set aside. (Alternatively, a good quality fresh store-bought pesto can be used.)

6. Create the Velvety Sauce: Remove the tomato sauce from the heat. Carefully blend the sauce until completely smooth using either a handheld stick blender directly in the pan or by transferring it to a food processor (allowing it to cool slightly first if using a processor). If using a food processor, return the blended sauce to the pan.

7. Finish the Sauce with Cream & Combine: Return the pan with the smooth sauce to a low heat. Stir in the double cream until fully incorporated, and bring the sauce back to a gentle simmer. Add the reserved crispy chicken sausages back to the pan. Add the drained pasta and the 15g of grated Parmesan. Toss everything together vigorously until the pasta is thoroughly coated in the deliciously creamy vodka tomato sauce. Taste and season with additional salt and freshly ground black pepper as needed. If the sauce is too thick, stir in a splash or two of the reserved pasta water to reach your desired consistency.
