To Make The Pasta:

  • 200 g dried pasta
  • Mini mozzarella pearls, to serve (optional)
  • Cherry tomatoes, to serve (optional)

To Make The Pesto:

  • 100 g pine nuts, toasted
  • 100 g basil, a handful of leaves reserved for garnish
  • 200 ml olive oil (light flavored, good quality)
  • 1 garlic clove, optional (adjust to taste)
  • 1 lemon, zest and juice
  • ½ tbsp freshly ground black pepper
  • 70 g Parmesan cheese, freshly grated
  • Salt, to taste (Parmesan is salty, so add carefully)

  1. Prepare the Pesto: Combine all of the pesto ingredients (toasted pine nuts, basil, olive oil, garlic, lemon zest and juice, black pepper, and Parmesan) into a blender or food processor. Blitz until you achieve a smooth or slightly chunky consistency, depending on your preference. Taste the pesto and adjust seasoning if necessary; you may find it’s salty enough from the cheese. Once blended, decant the fresh pesto into a clean jar.
  2. Cook the Pasta: Bring a medium pan of salted water to a rolling boil.
