Ingredients

  • 150 g dark chocolate (70% cocoa recommended)
  • 150 g unsalted butter
  • 150 g light soft brown sugar
  • 3 large eggs (at room temperature)
  • 55 g plain flour (all-purpose flour)
  • ¾ tsp instant coffee powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat Oven & Prepare Molds: Preheat your oven to 200°C (180°C fan/400°F). Generously grease four individual pudding basins or ramekins with butter. For easy release, cut four circles of greaseproof (parchment) paper to fit the bottom of each basin and place them inside.
  2. Melt Chocolate & Butter: In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Melt gently either in a microwave (in 30-second intervals, stirring) or over a bain-marie until smooth and glossy. Let it cool slightly for a few minutes.
  3. Combine Wet Ingredients: Once the chocolate mixture has cooled slightly, add the eggs and light soft brown sugar to the bowl. Whisk or stir vigorously until all ingredients are thoroughly combined and smooth.
  4. Fold in Dry Ingredients: Add the plain flour, instant coffee powder, vanilla extract, and a pinch of salt to the chocolate mixture. Gently fold with a spatula or wooden spoon until just combined, ensuring no dry streaks of flour remain. Be careful not to overmix.
  5. Bake: Divide the batter evenly among the prepared basins. Place them on a baking tray and bake in the preheated oven for 10-15 minutes. Crucially, start checking at 10 minutes.   • Freezing (Unbaked): These puddings freeze exceptionally well at the unbaked stage. Wrap individual uncooked puddings tightly in plastic wrap and then foil to prevent freezer burn, and freeze for up to 3 months. Bake from frozen; they will typically need an extra 8-10 minutes in the oven, on top of the regular 10-15 minute baking time (totaling 18-25 minutes). Always slightly underbake rather than overbake for that perfect molten core.
  • Make Ahead Tip: Doing a practice batch before guests arrive is always a good idea – and you get to enjoy the extra puddings yourself! Making these ahead and storing them in the fridge allows for a suitable, relaxed break between your main course and dessert, minimizing stress during entertaining.
